1. Traditional Japanese liquor brewed from rice. Contains a relatively high percentage of alcohol.
2. Enormous quantities are made in Hyogo and Kyoto prefectures where major breweries are located.
3. Labeled according to the different ways of brewing and the quality of ingredients as junmai (pure rice without additive alcohol), hon-jozo (authentically brewed) or gin-jo (selected draft).
4. There are numerous and varied ways to enjoy this rice wine, depending on whether you chill or heat it. Warming it up to around 35°C degrees (called hitohada-kan, or “body temperature”) is considered to enrich sweetness.
5. Simply known to the world as sake, it has become increasingly popular outside Japan in recent years.
