1. Okinawan local specialty cuisine. Called suba or uchinaa suba in the Okinawan dialect.
2. Although referred to as soba (Japanese for “buckwheat”), it is actually made from 100% wheat flour.
3. Noodles are made with seawater or lye-ash from firewood, like Chinese noodles. Since the noodles are thick while the soup is a Japanese-style fish base, Okinawa soba is similar to Japanese udon in taste and texture.
4. Rice balls, inari-zushi, and juushii (Okinawan steamed pilaf) are prepared as set menu items to accompany Okinawa soba.
5. Standard Okinawa soba ingredients include sliced pork belly and other pork combinations — sohki soba (pork ribs), tebichi soba (pig trotters), nakami soba (pork pluck), etc. Names vary depending on the topping.
