4. There are many Edomae zushi restaurants and bars that purchase their fresh fish and shells from Tsukiji Market. Sushi-go-round is an inexpensive and casual way to enjoy this cuisine. However, you should definitely try the full-fledged Edomae zushi on the spotless wooden counter of a luxury sushi restaurant/bar.
Suggested etiquette at luxury sushi restaurants
・When sushi is served, take pieces and eat them as soon as possible, leaving nothing uneaten on the counter.
・Strong scent of fragrance and cigarettes should be strictly avoided.
・Put a little amount of soy sauce only on the fish or shell part. Don’t soak them entirely.
・Enjoy a conversation with the sushi master over the counter.
