Dive into Fukuoka’s food stalls in the evening!

At dusk, tiny lights start to illuminate Fukuoka’s office district and the Nakasu area. Roadside food stalls are a Fukuoka specialty. There are several areas where food stalls can be found: the Tenjin neighborhood boasts the largest, the Nagahama area is closer to the fresh fish market, while the Nakasu entertainment district is near the waterfront. The number of food stalls streets hit a peak around 1965, with 400 stalls active at the time. Although at present numbering slightly under 200, they do bustling business. After hours, office workers and tourists sit around small counters and drink sake together harmoniously. It might take some courage to pass under the noren store curtain, but once you enter, the stallholders and regular customers will welcome you with a smile. This amiable atmosphere is pure Fukuoka.

A food stall tour is never complete without the delicious pork flavor of Hakata ramen

In Japan, going around a series of different restaurants to eat is called hashigo, or "ladder" dining. Ladder dining at Fukuoka food stalls is great fun. To round things up, you must try the great Fukuoka specialty, Hakata ramen. The distinctively cloudy tonkotsu soup draws its flavor from pork bones. There is also a rich variation aside from standard thin noodles, including straight noodles, and curly noodles. Take red ginger from the counter and put in as much as you like, then smack your lips with the taste of authentic ramen and a meal that will be the highlight of your day.
