Fresh seafood from the Sea of Japan
When the people of Toyama enjoy fresh fish they say "Kitokito na Sakana danbe!" "Kitokito" is a regional dialect meaning something "fresh" that has "just been caught", etc. Essentially, the fish caught in this area is so fresh and delicious that a new word had to be created to describe it! The fish are caught in "Toyama Bay". The bottom of the sea is divided into 16 valleys and there is almost no shallow water, making Toyama Bay the perfect habitat for fish. This makes it possible to catch a variety of fresh seafood.
Firefly squid that light up the sea at dawn - a famous sight of Toyama
Firefly squid rising to the surface of the sea during spring is a famous sight in Toyama. This phenomenon occurs as Firefly squid do not return to the deep sea after spawning during the spawning season, and large quantities are washed up on the shore. Firefly squid are equipped with special light-producing organs which emit a mystical pale light and produce a fantastic scene. Firefly squid are delicious eaten as is as sashimi or roasted lightly to bring out their aroma. Firefly squid dressed with vinegar and miso is a popular dish at "Daito", an izakaya (tavern) located near Toyama Station. You will never get tired of eating Firefly squid if you visit Toyama during spring!
White shrimp in summer, yellowtail in winter - the Toyama Sea tells the coming of the season.
The white shrimp caught during summer are the "white jewel" of Toyama Bay! The white shrimp that makes the deep sea of Toyama Bay its home is a rare species, and Toyama is the only place in the world it is caught! White shrimp is characterized by its refined sweetness and can be eaten as sashimi or as part of a rice bowl. "Shiroebitei" located in Toyama Station serves white shrimp tempura rice bowls and white shrimp sashimi rice bowls and is extremely popular with tourists. You definitely have to try these white shrimp dishes if you come to Toyama. Winter yellowtail is also famous in Toyama during winter. "Himi yellowtail" is a particular brand of yellowtail that commands a price of 200,000 yen per fish. So whatever the season, there is always delicious seafood to enjoy in Toyama.
